Mexican : Chipotle-Marinated Tenderloin Tips (Mexican Style)
- 1/4 cup TABASCO® brand Chipotle Pepper Sauce
- 1 1/2 pounds boneless lean beef tenderloin or sirloin, cut into small cubes
- 2 tablespoons vegetable or olive oil, divided
- 1 small onion, thinly sliced
- 1 clove garlic, minced
- 1 (14.5-ounce) can diced stewed tomatoes
- 1 large green bell pepper, cut into strips
- Warm corn tortillas or hot cooked rice (optional)
Combine TABASCO® Chipotle Sauce and cubed beef in a medium bowl and marinate in refrigerator at least 1 hour.
Meanwhile, heat 1 tablespoon of the oil in a small skillet over medium heat. Add onion and garlic and cook 1 to 2 minutes or until tender; stir in tomatoes and set aside.
Heat remaining 1 tablespoon oil in a large skillet over medium heat; add marinated beef and cook 10 to 12 minutes or until completely cooked. Add green pepper and cook 2 minutes longer. Stir in tomato mixture and heat through. Serve over corn tortillas or rice, if desired.
Makes 4 to 6 servings.
