Chili : Spicy Black Bean Vegetarian Chili
- 1 tablespoon vegetable oil
- 1 red onion, diced
- 1 green or yellow bell pepper, diced
- 1 clove garlic, minced
- 2 cans (15-ounces) black beans, drained
- 2 cans (14-1/2 ounces) diced tomatoes
- 1 cup vegetable broth
- 1 tablespoon Original TABASCO® brand Pepper Sauce
- 2 teaspoons ground cumin
- 1 teaspoon salt
- Sour cream, optional
Heat vegetable oil in 4-quart saucepan over high heat. Add onion, bell pepper and garlic; cook until tender, about 5 minutes, stirring occasionally.
Stir in black beans, tomatoes (and their liquid), vegetable broth, TABASCO® Sauce, cumin and salt. Heat mixture to boiling over high heat. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.
Serve with sour cream, if desired.
Makes 6 servings.
