Mexican : Okeechobee Black Bean Salsa

  • 2 cups canned black beans, rinsed and drained
  • 1 cup corn kernels, cooked
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 2 tablespoons chopped tomato
  • 1 teaspoon Original TABASCO® brand Pepper Sauce
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Combine all ingredients in a large mixing bowl and stir well. Refrigerate until ready to serve. Serve with tortilla chips.

Makes 4 cups.
