Southern/Soul Food : Spicy Sweet Potato Soup
- 4 cups chicken broth
- 3 cups diced, peeled sweet potatoes (about 1 pound)
- 3 tablespoons fresh orange juice
- 1/2 teaspoon grated orange zest
- 1/4 cup reduced-fat sour cream
- 1 teaspoon Original TABASCO® brand Pepper Sauce
- 1/4 teaspoon ground nutmeg
- Chopped fresh cilantro, for garnish
Bring chicken broth to a boil in a large saucepan. Add sweet potatoes; cover, reduce heat to low, and simmer 15 to 20 minutes or until potatoes are soft. Using a hand-held blender or food processor, puree sweet potatoes until smooth; stir in orange juice, zest, sour cream, TABASCO® Sauce, and nutmeg. Place over low heat and heat through. Garnish each serving with cilantro.
Makes 4 servings. This recipe is low in fat.
