American : Zucchini Gratin
- 2 large zucchini, cut into 1/2-inch slices
- 1 medium yellow squash, cut into 1/2-inch slices
- 3 small tomatoes, cut into wedges
- 1 clove garlic, crushed
- 3 tablespoons olive oil
- 2 tablespoons TABASCO® brand Green Jalapeño Pepper Sauce
- 1 tablespoon chopped fresh basil, or 1 teaspoon dried
- 1 teaspoon salt
- 1/4 cup grated Parmesan cheese
Combine all ingredients except cheese in a 2-quart casserole and toss until well mixed. Spread mixture evenly and sprinkle with cheese. Bake in a 425°F oven for 30 minutes or until vegetables are tender. Serve warm or cold.
Makes 6 servings.
