Salads : New Potato Salad
- 6 medium-size red new potatoes, cubed
- 1/3 cup olive or vegetable oil
- 1/4 cup cider vinegar
- 1 tablespoon country-style Dijon mustard
- 1 small onion, chopped
- 1 clove garlic, minced
- 1/2 teaspoon Original TABASCO® brand Pepper Sauce
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh dill or 1/2 teaspoon dried
- 1 tablespoon chopped fresh tarragon or 1/2 teaspoon dried
Cover potatoes with salted water in a large saucepan over high heat and bring to a boil. Reduce heat to medium and cook 10 to 15 minutes or until just potatoes are tender; drain and set aside.
Meanwhile, combine remaining ingredients in a large bowl and mix well. Add warm potatoes and toss until evenly blended. Cover and refrigerate at least 2 hours to blend flavors.
Makes 6 servings.
