Post-Thanksgiving Day Tactics for the
Turkey-Challenged

There's a proliferation of advice out there to get you
through the hectic abundance of Thanksgiving Day. But what about
after the fact? When dishes are stacking up and there's so much
leftover turkey it's coming out your ears? Not that you have
anything against turkey, but an 18-pounder can leave even the
most creative of cooks in quite a quandary come the day after
Thanksgiving. Not to worry. While all your relatives are still
glued to the sofa, we're going to help you whip up a few dishes
that not only taste great but make your refrigerator space more
manageable and your kitchen less like a disaster area.
For a change of pace from the traditional, try out our Turkey
Enchiladas with Pepper Salsa. Just spoon a creamy
mixture of turkey, green onions and Monterey Jack cheese into
the center of flour tortillas. Roll 'em up, place in a baking
dish, sprinkle with more cheese and bake for 20 minutes. Serve
topped with an olive pepper salsa spiked with cilantro, lime
juice and
Original TABASCO® brand Pepper Sauce.
For a quick dish with a totally different take on turkey,
there's Turkey
Curry served over white rice. And it only takes
30 minutes from start to finish. Aromatic vegetables like
onion, carrot and garlic - plus curry powder, ginger and TABASCO® Sauce - give it a wonderful pungency, with raisins
adding just a touch of sweetness. To make it even more fun,
serve with small bowls of chopped peanuts or cashew nuts,
shredded coconut, thinly sliced green onions, slivers of orange
zest and mango chutney.
And finally, for a taste from yet another part of the world,
cook up Turk
A-Leekie Soup in the hearty Scottish tradition.
Barley, leeks, prunes (trust us on this one), and TABASCO® Sauce give the turkey
meat and broth real character and amazing flavor. Served with
crusty bread, it's a meal any guest will appreciate.
Still laden with leftover turkey? Toss chunks of the stuff
into fresh green salads, or slice it thin for sandwiches and
top with melted cheese or cranberry sauce. Use turkey in recipes
that usually call for veal or chicken, such as veal scalloppine
or chicken parmesan. Whatever you do, top it with
TABASCO® Sauce to enhance its characteristic
flavor.
