What is Real Barbecue?

What constitutes "real" barbecue can be as varied as its spelling: barbeque, barbicue, bar-b-q, bar-b-que, BBQ, cue, or just "Q". Real barbecue generally refers to meat that has been slow-cooked for many hours over hardwood coals, giving the meat a delectable smoky flavor. But beyond that, the definition usually depends upon where you come from. Because of the labor and time involved, most of the real "cue" consumed is prepared in commercial pits.

In the area of the south known as the Barbecue Belt - North Carolina, South Carolina, Georgia, Alabama, Tennessee, Kentucky and Arkansas-barbecue almost always means pork, and a favorite way to eat it is on a sandwich. But when it comes to the best sauce, accompaniments, and the way it is served, barbecue aficionados rarely agree.
