Eula Mae Doré grew up in the small rural community of Coteau in south Louisiana. After her mother's death in 1942, at age 10, she helped her father raise her two brothers and her sister. In 1949, she married Walter Doré and they moved to Avery Island where she has worked and lived since. She is a self-taught cook who was determined to duplicate the local Cajun dishes that her mother and grandmother prepared when she was a child.

There is no doubt she succeeded. She has cooked alongside such premier chefs as Pierre Franey and Jacques Pépin, and cookbook author Marion Cunningham.

Marcelle Bienvenu, a Cajun from St. Martinville, LA, and a recognized authority on Cajun country cooking, is a columnist for the New Orleans Times-Picayune. She has authored a number of cookbooks, including Who's Your Mama, Are You Catholic, And Can You Make A Roux?, as well as several collaborations with Emeril Lagasse. She has operated her own restaurant near Lafayette, LA, and worked at Commander's Palace and K-Paul's Louisiana Kitchen in New Orleans. She was a researcher and consultant for Time-Life books, contributing to the Foods of the World series.
