AVERY ISLAND, LA
One of the best-loved regional cuisines, Cajun cooking, is the country cooking of Louisiana. Now Eula Mae Doré, an entirely self-taught Cajun cook who has spent her long life cooking for several generations of the McIlhenny family, as well as for friends, visitors and employees of McIlhenny Company, the maker of Tabasco® sauce, has compiled her Cajun food recipes to share with the world. In the heart of Acadiana, an area rich with culture and full of flavor, Avery Island, Louisiana, which was Eula Mae's home for most of her life, is the setting for this quintessential Cajun cookbook, EULA MAE'S CAJUN KITCHEN: COOKING THROUGH THE SEASONS ON AVERY ISLAND (Harvard Common Press; October 2002).

“Cook with what you have. As long as it’s fresh and prepared with care, your meal will always be delicious!” Eula Mae Doré
EULA MAE'S CAJUN KITCHEN, a collection of 100 recipes, offers home cooks the very best of Avery Island's culinary treasures by capturing the fine flavors of Cajun country. Compiled with Marcelle Bienvenu, a recognized authority on Cajun cooking, Eula Mae takes us on an intriguing culinary journey through what she refers to as her Garden of Eden. The Island’s wild blackberries are used in her Blackberry Dumplings and its sassafras trees help to thicken her gumbos. Marcelle chronicles a year in the life of Eula Mae, unveiling her cooking secrets and observing how she makes each dish. Because Eula Mae has never used written recipes or had any formal culinary training, Marcelle made sure to include her helpful advice and to list the ingredients with step-by-step instructions.

Portions of the cookbook include Eula Mae's story. Her joyous recollections of the fun and fares from each seasonal occasion with the McIlhenny family fill the pages of the book, which is flavored by the influences that the many people in her life have had on her cooking.

Eula Mae offers practical knowledge of the techniques and approaches needed to create an authentic Cajun meal in the comfort of your own kitchen. Whether it's Fried Catfish Tails, Boudin Balls, Seafood Gumbo, Crawfish Etouffée, or her signature Pecan Tarts these clear, simple recipes will have you cooking like Eula Mae from the very first page.
