Why do the ingredients in TABASCO® sauce sometimes separate?

TABASCO® is an all natural product and contains no added gums or artificial colors. As a result, the sauce will occasionally separate depending on the pepper content and pectin levels of the peppers used in sauce production. But don't worry, separation of ingredients DOES NOT mean the product has gone bad. All peppers used in the production of TABASCO brand Pepper Sauce are grown by our own growers, and pepper quality is strictly controlled. Though the peppers will vary depending on growing conditions, the completed production process ensures that every batch of bottled sauce has met all the set quality control specifications. Normally, when a bottle of sauce separates, it goes back into solution when shaken well. So just shake and enjoy.
