Why does a bottle of TABASCO® sauce darken over time?

The red pigments in the TABASCO® peppers are light sensitive and will darken over time. TABASCO® brand Pepper Sauce is an all natural product and contains no preservatives, stabilizers or additives. Because there are no color additives, excessive contact with artificial light or sunlight may cause the sauce to darken. Extreme cold or hot temperatures may also cause the sauce to darken. But don't worry, this does not mean the sauce has gone bad. It has a shelf life of 5 years.
